Ingredients

  • 1.5 cups All-purpose flour
  • 1 cup Plant-based milk
  • 1 teaspoon Apple cider vinegar
  • 2 tablespoons Sugar
  • 2 teaspoons Baking powder
  • 2 medium Apples
  • 1 teaspoon Vanilla extract
  • 0.5 cup Vegetable oil
  • 2 tablespoons Powdered sugar

Instructions

  1. 1In a large bowl, whisk together flour, sugar, and baking powder.
  2. 2In a separate bowl, combine plant-based milk and apple cider vinegar. Let sit for a few minutes to curdle.
  3. 3Add the wet ingredients to the dry ingredients and mix until just combined.
  4. 4Peel, core, and dice the apples. Gently fold the diced apples and vanilla extract into the batter.
  5. 5Heat vegetable oil in a large skillet over medium heat.
  6. 6Drop spoonfuls of the batter into the hot oil.
  7. 7Fry for 2-3 minutes per side, or until golden brown.
