Ingredients

  • 1 pound Small Shrimp, peeled and deveined
  • 1 cup Shredded Sweet Potato
  • 1/2 cup Shredded Carrots
  • 1/4 cup Chopped Green Onions
  • 1/2 cup All-Purpose Flour
  • 2 tablespoons Cornstarch
  • 1 teaspoon Baking Powder
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Black Pepper
  • 1/2 cup Water
  • 2 cups Vegetable Oil

Instructions

  1. 1In a large bowl, combine the shrimp, sweet potato, carrots, and green onions.
  2. 2In a separate bowl, whisk together the flour, cornstarch, baking powder, salt, and pepper.
  3. 3Gradually add water to the dry ingredients, mixing until a smooth batter forms.
  4. 4Pour the batter over the shrimp and vegetable mixture and mix well.
  5. 5Heat vegetable oil in a deep frying pan or wok over medium-high heat.
  6. 6Drop spoonfuls of the mixture into the hot oil, being careful not to overcrowd the pan.
  7. 7Fry until golden brown and crispy, about 3-4 minutes per side.
  8. 8Remove and drain on paper towels. Serve immediately with vinegar dipping sauce (optional).
