Ingredients

  • 1 lb Small shrimp
  • 1 cup Shredded sweet potato
  • 1/2 cup Shredded carrots
  • 1/4 cup Chopped green onions
  • 1/4 cup Cornstarch
  • 1/4 cup Rice flour
  • 1/2 cup Water
  • 1/2 tsp Salt
  • 1/4 tsp Black pepper
  • 2 cups Vegetable oil

Instructions

  1. 1In a large bowl, combine shrimp, shredded sweet potato, shredded carrots, and chopped green onions.
  2. 2In a separate bowl, whisk together cornstarch, rice flour, water, salt, and black pepper to form a batter.
  3. 3Pour the batter over the shrimp and vegetable mixture. Mix well to combine.
  4. 4Heat vegetable oil in a deep skillet or pot over medium-high heat.
  5. 5Drop spoonfuls of the mixture into the hot oil, being careful not to overcrowd the pan.
  6. 6Fry for about 2-3 minutes per side, or until golden brown and crispy.
  7. 7Remove the fritters from the oil and drain on paper towels.
  8. 8Serve hot.
