Ugandan Matoke (Plantain Stew)

Ingredients

  • 8 Green Plantains
  • 1 large Onion
  • 3 medium Tomatoes
  • 3 cloves Garlic
  • 1/2 cup Peanut Butter
  • 2 cups Water
  • 2 tbsp Vegetable Oil
  • 1/2 tsp Salt
  • 1/4 tsp Black Pepper

Instructions

  1. 1Peel the green plantains and cut them into 2-inch pieces.
  2. 2Heat vegetable oil in a large pot over medium heat.
  3. 3Add onion and garlic and cook until softened, about 5 minutes.
  4. 4Add chopped tomatoes and cook for 2 minutes.
  5. 5Stir in peanut butter and water. Bring to a simmer.
  6. 6Add plantain pieces to the pot. Cover and simmer for 30-35 minutes, or until plantains are tender and easily mashed.
  7. 7Mash some of the plantains to thicken the sauce.
  8. 8Season with salt and pepper.
  9. 9Serve hot with greens or beans.
