Ingredients

  • 2 cups Cornmeal
  • 4 cups Water
  • 1 lb Collard Greens
  • 1 medium Onion
  • 1 medium Tomato
  • 1 cup Vegetable Broth
  • 2 tbsp Vegetable Oil
  • 2 cloves Garlic
  • 0.5 tsp Salt
  • 0.25 tsp Black Pepper

Instructions

  1. 1To make the ugali, bring water to a boil in a heavy-bottomed pot. Gradually whisk in cornmeal, stirring constantly to avoid lumps.
  2. 2Reduce heat to low and continue to cook, stirring frequently, until the ugali is thick and pulls away from the sides of the pot (about 20-25 minutes).
  3. 3While the ugali is cooking, prepare the greens. Heat vegetable oil in a separate pot over medium heat. Add chopped onion and sauté until softened.
  4. 4Add minced garlic and diced tomato to the pot and cook for another 5 minutes.
  5. 5Add chopped collard greens and vegetable broth to the pot. Season with salt and pepper.
  6. 6Bring to a simmer, then reduce heat to low, cover, and cook for 20-25 minutes, or until the greens are tender.
  7. 7Serve the ugali hot with the slow-cooked greens.
