Ingredients

  • 2 medium Purple Sweet Potato
  • 1/2 cup All-Purpose Flour
  • 2 tablespoons Sugar
  • 1/4 teaspoon Salt
  • 2 cups Vegetable Oil

Instructions

  1. 1Peel and mash the 2 medium Purple Sweet Potatoes in a medium bowl until smooth.
  2. 2Add the 1/2 cup All-Purpose Flour, 2 tablespoons Sugar, and 1/4 teaspoon Salt to the mashed sweet potato. Mix everything together thoroughly until a smooth dough forms.
  3. 3Pour the 2 cups Vegetable Oil into a large, heavy-bottomed pot or deep skillet. Heat the oil over medium heat until it reaches 350°F (175°C).
  4. 4Shape the sweet potato dough into small balls, about 1-inch in diameter, or flatten them into small patties.
  5. 5Carefully place a few fritters into the hot oil, making sure not to overcrowd the pot. Fry for 3-4 minutes per side, until they are golden brown and appear puffed up.
  6. 6Use a slotted spoon to remove the fried fritters from the hot oil. Place them on a plate lined with paper towels to drain any excess oil.
  7. 7Serve the Ubi Ungu Goreng warm.
