Ingredients

  • 4 cups All-purpose flour
  • 2 1/4 tsp Instant dry yeast
  • 1/4 cup Sugar
  • 1 tsp Salt
  • 1/4 cup Vegan butter, melted
  • 1/2 cup Ube halaya (purple yam jam)
  • 1 1/4 cups Warm water
  • 1/2 cup Breadcrumbs

Instructions

  1. 1In a large bowl, combine flour, yeast, sugar, and salt.
  2. 2Add melted vegan butter, ube halaya, and warm water. Mix until a shaggy dough forms.
  3. 3Turn the dough out onto a lightly floured surface and knead for 8-10 minutes, or until smooth and elastic.
  4. 4Place the dough in a greased bowl, turning to coat. Cover and let rise in a warm place for 1-1.5 hours, or until doubled in size.
  5. 5Punch down the dough and divide it into 12 equal pieces.
  6. 6Roll each piece into a log, then roll in breadcrumbs.
  7. 7Place the rolls on a baking sheet lined with parchment paper. Cover and let rise for another 30 minutes.
  8. 8Preheat oven to 350°F (175°C). Bake for 15-20 minutes, or until golden brown.
  9. 9Let cool slightly before serving.
