Ube Halaya (Purple Yam Jam)

Ingredients

  • 2 cups Ube (Purple Yam), cooked and mashed
  • 1 can (13.5oz) Coconut Milk
  • 1 can (14oz) Condensed Milk
  • 2 tbsp Butter

Instructions

  1. 1In a non-stick pan, combine mashed ube, coconut milk, and condensed milk.
  2. 2Cook over medium heat, stirring constantly to prevent sticking.
  3. 3Add butter and continue stirring until the mixture thickens and pulls away from the sides of the pan (about 45-60 minutes).
  4. 4Transfer to a greased dish and let it cool completely.
  5. 5Refrigerate for at least 2 hours before serving.
  6. 6Garnish with latik (coconut curds) if desired.
