Ingredients

  • 8 slices Crusty Bread (Baguette or Ciabatta)
  • 1 15-ounce can Canned White Beans (Cannellini or Great Northern)
  • 1 pint Cherry Tomatoes
  • 2 cloves Garlic
  • 1/4 cup Fresh Basil
  • 3 tablespoons Olive Oil
  • 1 tablespoon Balsamic Vinegar
  • 1/4 teaspoon Salt
  • 1/4 teaspoon Black Pepper

Instructions

  1. 1Preheat oven to 375°F (190°C).
  2. 2Slice the bread into 1/2-inch thick slices.
  3. 3Brush the bread slices with olive oil and bake for 8-10 minutes, or until lightly toasted.
  4. 4While the bread is toasting, drain and rinse the white beans.
  5. 5Chop the cherry tomatoes and mince the garlic.
  6. 6In a bowl, combine the white beans, cherry tomatoes, minced garlic, fresh basil, olive oil, balsamic vinegar, salt, and pepper.
  7. 7Top each toasted bread slice with the white bean mixture.
  8. 8Serve immediately.
