Turon (Banana Spring Rolls)

Sweet Filipino snack of saba bananas and jackfruit wrapped in spring roll wrappers and fried to a golden crisp.

Ingredients

  • 4 medium Saba Bananas
  • 1/2 cup Jackfruit
  • 2 tbsp Brown Sugar
  • 8 sheets Lumpia Wrappers
  • 1 cup Vegetable Oil

Instructions

  1. 1Peel the 4 medium Saba Bananas and slice each banana half lengthwise.
  2. 2Lay out the 8 sheets of Lumpia Wrappers. Place one banana half and a small amount of the 1/2 cup Jackfruit onto one end of each wrapper. Sprinkle each with 1/2 teaspoon of the 2 tbsp Brown Sugar.
  3. 3Roll each wrapper up tightly, tucking in the sides as you go. Moisten the final edge of the wrapper with a little water and press to seal.
  4. 4Pour the 1 cup of Vegetable Oil into a large, heavy-bottomed skillet. Heat the oil over medium heat until it reaches 350°F (175°C).
  5. 5Carefully place 4 turon into the hot oil, making sure not to overcrowd the pan. Fry for 3 to 5 minutes per side, or until the wrappers are golden brown and crisp, and the sugar is caramelized.
  6. 6Remove the turon from the skillet using a slotted spoon and place them on a plate lined with paper towels to drain any excess oil. Repeat with the remaining 4 turon.
  7. 7Serve the turon warm.
