Ingredients

  • 1 lb Green beans
  • 1 medium Onion
  • 2 medium Tomatoes
  • 1 tbsp Tomato paste
  • 3 tbsp Olive oil
  • 2 cloves Garlic
  • 1 tsp Salt
  • 0.5 tsp Black pepper
  • 1 pinch Sugar

Instructions

  1. 1Wash the 1 lb of green beans. Trim off the ends and cut them into 1-inch pieces.
  2. 2Place a large pot on the stove over medium heat (about 350°F or 175°C). Add the 3 tablespoons of olive oil.
  3. 3Add the 1 medium onion, chopped, and the 2 cloves of garlic, minced, to the pot. Sauté for 5 minutes, stirring often, until the onion is softened and translucent.
  4. 4Add the 1 lb of green beans to the pot. Cook for another 5 minutes, stirring occasionally, until they start to turn bright green.
  5. 5Stir in the 2 medium tomatoes, diced, the 1 tablespoon of tomato paste, the 1 teaspoon of salt, the 0.5 teaspoon of black pepper, and the 1 pinch of sugar. Mix everything together well.
  6. 6Pour in 1/2 cup of water. Stir to combine.
  7. 7Increase the heat to bring the mixture to a boil. Once boiling, reduce the heat to low, cover the pot, and let it simmer for 30 to 35 minutes. The green beans should be tender when pierced with a fork.
  8. 8Serve the Turkish Green Bean Stew warm.
