Ingredients

  • 1.5 lbs White Fish Fillets
  • 1 medium Onion
  • 1 medium Green Bell Pepper
  • 3 medium Tomato
  • 3 cloves Garlic
  • 3 tablespoons Olive Oil
  • 0.25 cup Parsley
  • 1 teaspoon Oregano
  • 1 teaspoon Salt
  • 0.5 teaspoon Black Pepper
  • 4 slices Lemon Slices

Instructions

  1. 1Preheat oven to 375°F (190°C).
  2. 2Heat olive oil in a large oven-safe skillet or Dutch oven over medium heat. Add diced onion and green bell pepper and cook until softened, about 5 minutes. Add minced garlic and cook for another minute until fragrant.
  3. 3Add diced tomatoes, oregano, salt, and pepper to the skillet. Cook for 10 minutes, stirring occasionally.
  4. 4Arrange the fish fillets on top of the tomato mixture. Sprinkle with chopped parsley.
  5. 5Cover the skillet with a lid or foil and bake for 20 minutes, or until the fish is cooked through.
  6. 6Serve hot with lemon slices.
