Ingredients

  • 1 cup Bulgur
  • 2 cups Vegetable Broth
  • 0.5 medium Onion
  • 0.5 medium Red Bell Pepper
  • 0.5 medium Green Bell Pepper
  • 1 small Zucchini
  • 1 small Carrot
  • 1 tablespoon Tomato Paste
  • 2 tablespoons Olive Oil
  • 1 teaspoon Dried Mint
  • 0.5 teaspoon Paprika
  • 0.75 teaspoon Salt
  • 0.25 teaspoon Black Pepper

Instructions

  1. 1Heat olive oil in a medium saucepan over medium heat. Add diced onion and cook until softened, about 3 minutes. Add diced bell peppers, zucchini, and carrot and cook for another 5 minutes.
  2. 2Stir in tomato paste, dried mint, paprika, salt, and pepper.
  3. 3Add bulgur to the saucepan and cook for 1 minute, stirring constantly.
  4. 4Pour in vegetable broth, bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes, or until bulgur is cooked and liquid is absorbed.
  5. 5Fluff bulgur with a fork before serving.
