Ingredients

  • 2 lbs Ground Turkey
  • 2 large Sweet Potatoes
  • 1/2 cup Almond Flour
  • 1 large Egg
  • 1/2 cup Onion (finely chopped)
  • 2 cloves Garlic (minced)
  • 1/4 cup Ketchup (gluten-free)
  • 1 tablespoon Worcestershire Sauce (gluten-free)
  • 1 tablespoon Dijon Mustard
  • 1 tablespoon Olive Oil
  • 1 teaspoon Salt
  • 1/2 teaspoon Black Pepper
  • 2 tablespoons Maple Syrup
  • 2 tablespoons Milk

Instructions

  1. 1Preheat oven to 375°F (190°C).
  2. 2Peel sweet potatoes, chop into chunks, and boil until tender, about 15-20 minutes. Drain and mash with maple syrup and milk until smooth. Set aside.
  3. 3In a large bowl, combine ground turkey, almond flour, egg, chopped onion, minced garlic, 2 tablespoons ketchup, Worcestershire sauce, Dijon mustard, salt, and pepper.
  4. 4Mix well with your hands until all ingredients are combined.
  5. 5Shape the mixture into a loaf and place it in a greased loaf pan.
  6. 6Spread remaining ketchup over the top of the meatloaf.
  7. 7Bake for 45-50 minutes, or until cooked through and the internal temperature reaches 165°F (74°C).
  8. 8Top with mashed sweet potatoes and bake for another 10 minutes.
  9. 9Let the meatloaf rest for 10 minutes before slicing and serving.
