Ingredients

  • 2 lbs Ground Turkey
  • 2 large Sweet Potatoes
  • 0.5 cup Almond Flour
  • 1 large Egg
  • 0.5 medium Onion
  • 2 cloves Garlic
  • 0.5 cup Ketchup
  • 2 tbsp Dijon Mustard
  • 0.25 cup Milk (dairy-free)
  • 2 tbsp Maple Syrup
  • 1 tsp Salt
  • 0.5 tsp Black Pepper
  • 2 tbsp Butter

Instructions

  1. 1Preheat your oven to 375°F (190°C).
  2. 2Peel the 2 large sweet potatoes and cut them into 1-inch (2.5 cm) cubes. Place the sweet potato cubes in a large pot and cover them with water. Bring the water to a boil over high heat, then reduce the heat to medium and simmer for 15-20 minutes, or until the sweet potatoes are very tender when pierced with a fork.
  3. 3Carefully drain the cooked sweet potatoes and return them to the pot. Add the 2 tbsp butter, 0.5 tsp of the 1 tsp salt, and 0.25 tsp of the 0.5 tsp black pepper. Mash the sweet potatoes until they are smooth and creamy, then set them aside.
  4. 4Finely dice the 0.5 medium onion and mince the 2 cloves garlic. In a large mixing bowl, combine the 2 lbs ground turkey, 0.5 cup almond flour, 1 large egg, the diced 0.5 medium onion, the minced 2 cloves garlic, 0.25 cup of the 0.5 cup ketchup, 2 tbsp Dijon mustard, 0.25 cup milk, the remaining 0.5 tsp of the 1 tsp salt, and the remaining 0.25 tsp of the 0.5 tsp black pepper. Mix everything thoroughly with your hands until just combined, being careful not to overmix.
  5. 5Transfer the turkey mixture into a standard 9x5-inch (23x13 cm) loaf pan, pressing it down gently to form an even loaf. Evenly spread the mashed sweet potatoes over the top of the meatloaf mixture, creating a smooth layer.
  6. 6Place the loaf pan in the preheated oven and bake for 35-40 minutes. While it bakes, in a small bowl, mix the remaining 0.25 cup of the 0.5 cup ketchup with the 2 tbsp maple syrup.
  7. 7After 35-40 minutes, carefully remove the loaf pan from the oven. Spread the ketchup and maple syrup mixture evenly over the sweet potato topping. Return the loaf to the oven and bake for an additional 10-15 minutes, or until the internal temperature of the meatloaf reaches 165°F (74°C) when measured with a meat thermometer inserted into the center, and the topping looks slightly caramelized.
  8. 8Once baked, carefully remove the loaf pan from the oven. Let the turkey meatloaf rest in the pan for 10 minutes before slicing and serving; this allows the juices to redistribute, ensuring a more tender and flavorful meatloaf.
