Tunisian Vegetable Stew (Marqa)

Ingredients

  • 2 tbsp Olive oil
  • 1 large Onion
  • 3 cloves Garlic
  • 2 medium Carrots
  • 2 medium Zucchini
  • 2 medium Potatoes
  • 1 15 oz can Chickpeas
  • 1 28 oz can Diced tomatoes
  • 2 cups Vegetable broth
  • 1 tbsp Harissa paste
  • 1 tsp Cumin
  • 1 tsp Coriander
  • 1 tsp Salt
  • 0.5 tsp Black pepper
  • 0.25 cup Plain yogurt

Instructions

  1. 1Heat olive oil in a large pot over medium heat.
  2. 2Add onion and cook until softened, about 5 minutes. Add garlic and cook for another minute until fragrant.
  3. 3Add carrots, zucchini, and potatoes to the pot and cook for 5 minutes, stirring occasionally.
  4. 4Stir in chickpeas, diced tomatoes, vegetable broth, harissa paste, cumin, and coriander. Bring to a boil, then reduce heat to low.
  5. 5Simmer for 30 minutes, or until vegetables are tender.
  6. 6Season with salt and pepper to taste.
  7. 7Serve hot with a dollop of plain yogurt.
