Tunisian Spiced Chickpea Fritters (Falafel)

Ingredients

  • 1 cup Dried Chickpeas
  • 1/2 cup Fresh Cilantro
  • 1/2 cup Fresh Parsley
  • 1/2 medium Onion
  • 3 cloves Garlic
  • 1 tablespoon Ground Cumin
  • 1 teaspoon Ground Coriander
  • 1/2 teaspoon Harissa Powder
  • 1 teaspoon Baking Soda
  • 1 teaspoon Salt
  • For frying as needed Vegetable Oil

Instructions

  1. 1Soak the dried chickpeas in water for at least 8 hours or overnight.
  2. 2Drain and rinse the chickpeas thoroughly.
  3. 3In a food processor, combine the chickpeas, cilantro, parsley, onion, garlic, cumin, coriander, harissa powder, baking soda, and salt.
  4. 4Process until a coarse paste forms. Do not over-process.
  5. 5Refrigerate the mixture for at least 30 minutes to help it bind.
  6. 6Heat vegetable oil in a deep fryer or large pot to 350°F (175°C).
  7. 7Shape the chickpea mixture into small patties or balls.
  8. 8Carefully drop the falafel into the hot oil and fry for 3-4 minutes, or until golden brown and crispy.
  9. 9Remove the falafel with a slotted spoon and drain on paper towels.
  10. 10Serve immediately as a snack.
