  • 1 1/2 cups Semolina Flour
  • 1/2 cup All-Purpose Flour
  • 1/2 cup Ground Almonds
  • 2 tsp Baking Powder
  • 1/4 tsp Salt
  • 1 cup Sugar
  • 1/2 cup Applesauce
  • 1/2 cup Orange Juice
  • 2 tbsp Orange Zest
  • 1/2 cup Olive Oil
  • 1 tsp Almond Extract

Instructions

  1. 1Preheat oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
  2. 2In a large bowl, whisk together semolina flour, all-purpose flour, ground almonds, baking powder, and salt.
  3. 3In a separate bowl, combine sugar, applesauce, orange juice, orange zest, olive oil, and almond extract.
  4. 4Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix.
  5. 5Pour the batter into the prepared cake pan and bake for 35-40 minutes, or until a toothpick inserted into the center comes out clean.
  6. 6Let the cake cool in the pan for 10 minutes before inverting it onto a wire rack to cool completely.
