Ingredients

  • 2 medium Oranges
  • 2 cups Ground Almonds
  • 4 large Eggs
  • 1 cup Sugar
  • 1 tsp Baking Powder
  • 1 tbsp Orange Blossom Water

Instructions

  1. 1Preheat your oven to 350°F (175°C). Prepare an 8-inch round cake pan by greasing it.
  2. 2Place the 2 medium oranges in a pot and cover them with water. Bring to a boil and cook for 1 hour, until the oranges are very soft. Drain the oranges and let them cool completely.
  3. 3Cut the cooled oranges into pieces, removing any seeds. Place the orange pieces into a food processor and blend until they form a smooth puree.
  4. 4In a large bowl, combine the 2 cups of ground almonds, 4 large eggs, 1 cup of sugar, and 1 tsp of baking powder.
  5. 5Add the 1 tbsp of orange blossom water and the smooth orange puree to the bowl with the almond mixture. Stir everything together until the batter is well combined.
  6. 6Pour the batter into the prepared 8-inch round cake pan. Bake for 35-40 minutes, or until a toothpick inserted into the center of the cake comes out clean.
  7. 7Let the cake cool in the cake pan for 10 minutes before carefully inverting it onto a wire rack to cool completely before serving.
