Ingredients

  • 2 tablespoons Olive oil
  • 1 large Onion
  • 2 medium Carrots
  • 2 stalks Celery
  • 4 cloves Garlic
  • 1 cup Red lentils
  • 1 28 oz can Canned diced tomatoes
  • 6 cups Vegetable broth
  • 1 tablespoon Harissa paste
  • 1 teaspoon Cumin
  • 1 teaspoon Coriander
  • 1/2 teaspoon Turmeric
  • 2 tablespoons Lemon juice
  • 1/4 cup Fresh cilantro or parsley

Instructions

  1. 1Heat olive oil in a large pot over medium heat. Add onion, carrots, and celery and cook until softened, about 8 minutes.
  2. 2Add garlic, cumin, coriander, and turmeric and cook for 1 minute more.
  3. 3Stir in red lentils, diced tomatoes, vegetable broth, and harissa paste. Bring to a boil, then reduce heat and simmer for 30 minutes, or until lentils are tender.
  4. 4Stir in lemon juice and season with salt and pepper to taste.
  5. 5Serve hot, garnished with fresh cilantro or parsley.
