Tunisian Harissa Roasted Sweet Potato Fries

Ingredients

  • 2 large Sweet potatoes
  • 2 tablespoons Olive oil
  • 1 tablespoon Harissa powder
  • 1/2 teaspoon Garlic powder
  • 1/4 teaspoon Salt
  • 1/4 teaspoon Black pepper

Instructions

  1. 1Preheat your oven to 400°F (200°C). Peel the 2 large sweet potatoes completely. Cut the peeled sweet potatoes lengthwise into fries approximately 1/2-inch (1.25 cm) thick.
  2. 2In a medium bowl, combine the 2 tablespoons of olive oil, 1 tablespoon of harissa powder, 1/2 teaspoon of garlic powder, 1/4 teaspoon of salt, and 1/4 teaspoon of black pepper. Stir these ingredients together until they are well mixed.
  3. 3Add the cut sweet potato fries to the medium bowl with the oil and spice mixture. Toss gently with your hands or a spatula until all the sweet potato fries are evenly coated.
  4. 4Spread the coated sweet potato fries in a single layer on a large baking sheet. Ensure that none of the fries are overlapping so they can crisp evenly.
  5. 5Bake the sweet potato fries in the preheated oven at 400°F (200°C) for a total of 20-25 minutes. After 10-12 minutes (halfway through the baking time), carefully remove the baking sheet from the oven and use tongs to flip each fry, then return the baking sheet to the oven to continue baking.
  6. 6The sweet potato fries are done when they appear golden brown in color and feel crispy to the touch. Serve immediately.
