Ingredients

  • 1.5 cups Couscous
  • 2 cups Boiling Water
  • 2 tablespoons Olive Oil
  • 0.25 teaspoon Saffron Threads
  • 2 medium Orange
  • 0.5 cup Dates
  • 0.25 teaspoon Cinnamon
  • 1 tablespoon Honey
  • 2 tablespoons Mint

Instructions

  1. 1Place the couscous in a large bowl. Pour boiling water over the couscous, cover, and let it sit for 5 minutes, or until the water is absorbed.
  2. 2Fluff the couscous with a fork.
  3. 3In a small bowl, combine saffron threads with 1 tablespoon of warm water and let it steep for 5 minutes.
  4. 4Heat olive oil in a large skillet over medium heat. Add the couscous and cook for 2-3 minutes, stirring constantly.
  5. 5Stir in the saffron water, orange segments, chopped dates, and cinnamon.
  6. 6Cook for another 2-3 minutes, stirring occasionally.
  7. 7Drizzle with honey and garnish with chopped mint. Serve warm.
