Ingredients

  • 2 tbsp Olive oil
  • 1 medium Onion, chopped
  • 3 cloves Garlic, minced
  • 2 15-oz cans Canned chickpeas, drained and rinsed
  • 1 14.5-oz can Diced tomatoes
  • 2 medium Carrots, chopped
  • 1 medium Zucchini, chopped
  • 1 medium Bell pepper (any color), chopped
  • 4 cups Vegetable broth
  • 1 tbsp Harissa paste
  • 1 tsp Ground cumin
  • 0.5 tsp Coriander
  • 0.75 tsp Salt
  • 0.25 tsp Black pepper
  • 2 tbsp Fresh parsley, chopped

Instructions

  1. 1Heat the olive oil in a large pot or Dutch oven over medium heat. Add the onion and garlic and cook until softened, about 5 minutes.
  2. 2Add the chickpeas, diced tomatoes, carrots, zucchini, and bell pepper.
  3. 3Stir in the vegetable broth, harissa paste, cumin, coriander, salt, and pepper.
  4. 4Bring to a boil, then reduce heat and simmer for 30 minutes, or until the vegetables are tender.
  5. 5Serve hot, garnished with fresh parsley.
