Túrós Csusza (Egg-Free Cottage Cheese Noodles)

A Hungarian noodle dish with cottage cheese and crispy bacon. This version is made without eggs, using a starch slurry for binding.

Ingredients

  • 1 lb Wide egg-free noodles
  • 1 lb Cottage cheese
  • 8 slices Bacon
  • 1 tbsp Potato starch
  • 2 tbsp Water
  • 1/2 cup Sour cream (optional)
  • 1 tsp Salt
  • 1/2 tsp Black pepper

Instructions

  1. 1Bring a large pot (at least 6-quart / 5.7-liter capacity) of water to a rolling boil over high heat (212°F / 100°C). Add the 1 lb Wide egg-free noodles to the boiling water. Cook the noodles for 8-10 minutes, stirring occasionally, until they are tender but still firm to the bite (al dente). Carefully drain the cooked noodles in a colander and set aside.
  2. 2While the noodles are cooking, place the 8 slices Bacon in a large, 12-inch (30 cm) skillet over medium-high heat (pan surface temperature approximately 350-375°F / 175-190°C). Cook the bacon for 8-10 minutes, turning the slices occasionally with tongs, until they are crispy and browned. Remove the crispy bacon from the skillet and place it on a plate lined with paper towels to drain, then leave the rendered bacon fat in the skillet.
  3. 3In a small bowl, combine the 1 tbsp Potato starch and 2 tbsp Water. Whisk them together with a fork or small whisk until the mixture is completely smooth and no lumps remain.
  4. 4Add the drained 1 lb Wide egg-free noodles to the large, 12-inch (30 cm) skillet containing the reserved bacon fat. Add the 1 lb Cottage cheese, the smooth potato starch mixture, 1 tsp Salt, and 1/2 tsp Black pepper to the skillet. Stir all the ingredients together thoroughly with a spoon or spatula until everything is well combined.
  5. 5Place the skillet with the noodle mixture over medium heat (pan surface temperature approximately 300-325°F / 150-160°C). Cook for 3-5 minutes, stirring constantly with a spoon or spatula. Continue stirring until the cottage cheese is heated through and the sauce has slightly thickened, coating the noodles evenly.
  6. 6Crumble the 8 slices of crispy bacon into small pieces over the cooked noodle mixture in the skillet. If you wish, add the 1/2 cup Sour cream to the skillet and stir it in until it is fully combined with the noodles, then serve the Túrós Csusza hot.
