Túros Csusza (Hungarian Noodles with Cheese)

Ingredients

  • 1 lb Wide egg noodles
  • 1 lb Túró (Hungarian curd cheese) or ricotta cheese
  • 1 cup Sour cream
  • 4 tbsp Butter
  • 1/2 tsp Salt
  • 1/4 tsp Black pepper

Instructions

  1. 1Bring a large pot of water to a rolling boil. Add the 1 lb Wide egg noodles and cook for 8 to 10 minutes, or until tender but still slightly firm to the bite. Drain the noodles thoroughly in a colander.
  2. 2While the noodles are cooking, place a large skillet over medium heat (around 300°F or 150°C). Add the 4 tbsp Butter to the skillet and let it melt completely, swirling the pan to coat the bottom.
  3. 3In a large bowl, combine the drained 1 lb Wide egg noodles, 1 lb Túró (or ricotta cheese), 1 cup Sour cream, the melted butter from the skillet, 1/2 tsp Salt, and 1/4 tsp Black pepper.
  4. 4Gently toss all the ingredients together in the large bowl until the noodles are evenly coated with the cheese mixture and the sour cream.
  5. 5Serve the Túros Csusza warm immediately.
