Tremoços (Lupini Beans)

These pickled lupini beans are a popular Portuguese snack, often served as an appetizer with drinks. This is naturally peanut free.

Ingredients

  • 1 lb Dried Lupini Beans
  • 10 cups Water
  • 2 tbsp Salt

Instructions

  1. 1Rinse the lupini beans under cold water.
  2. 2Soak the beans in cold water for at least 24 hours, changing the water several times.
  3. 3Place the beans in a large pot and cover with fresh water.
  4. 4Bring to a boil, then reduce heat and simmer for about 1 hour, or until the beans are tender.
  5. 5Drain the beans and rinse them under cold water.
  6. 6Place the beans in a jar or container and cover with salted water (2 tablespoons of salt per 4 cups of water).
  7. 7Refrigerate for at least 2 days, changing the salted water daily.
  8. 8Serve chilled as a snack.
