Tostones with Mojo

Crispy, twice-fried plantain slices served with a vibrant garlic and citrus mojo sauce. A classic Cuban snack that's naturally dairy-free.

Ingredients

  • 3 large Green Plantains
  • 2 cups Vegetable Oil
  • 6 cloves Garlic
  • 1/2 cup Orange Juice
  • 1/4 cup Lime Juice
  • 2 tablespoons Olive Oil
  • 1/2 teaspoon Cumin
  • 1 teaspoon Salt
  • 1/4 teaspoon Black Pepper

Instructions

  1. 1Peel the plantains and cut them into 1-inch thick slices.
  2. 2Heat vegetable oil in a deep skillet or pot over medium-high heat.
  3. 3Fry the plantain slices for 2-3 minutes per side, until lightly golden.
  4. 4Remove the plantains from the oil and drain on paper towels.
  5. 5Smash each plantain slice using a tostonera (plantain press) or a flat-bottomed dish.
  6. 6Return the smashed plantains to the hot oil and fry for another 2-3 minutes per side, until golden brown and crispy.
  7. 7Remove from oil and drain on paper towels. Sprinkle with salt.
  8. 8For the mojo: Mince the garlic. In a small saucepan, combine the orange juice, lime juice, olive oil, cumin, salt, and pepper.
  9. 9Heat the mojo sauce over low heat for 5 minutes to infuse the flavors.
  10. 10Serve the tostones hot with the mojo sauce.
