Tostones with Mojo

Twice-fried plantains, smashed and fried until golden and crispy, served with a tangy mojo sauce.

Ingredients

  • 2 each Green plantains
  • 2 cups Vegetable oil, for frying
  • 1/2 tsp Salt
  • 1/2 cup Mojo Sauce

Instructions

  1. 1Peel the 2 green plantains, then cut them into 1-inch thick slices.
  2. 2Pour the 2 cups of vegetable oil into a large, heavy-bottomed skillet and heat it over medium heat until it reaches 325°F (163°C).
  3. 3Carefully add the plantain slices to the hot oil and fry for 2 to 3 minutes per side, until they are lightly golden. Remove the plantains from the oil and place them on paper towels to drain.
  4. 4Place each fried plantain slice between two pieces of parchment paper (or directly into a tostonera if you have one) and use a sturdy, flat-bottomed dish or the tostonera to press down firmly, flattening each slice to about 1/2-inch thickness.
  5. 5Increase the heat under the skillet to medium-high, bringing the oil temperature back up to 350°F (177°C).
  6. 6Carefully return the flattened plantain slices to the hot oil, ensuring not to overcrowd the skillet, and fry for another 2 to 3 minutes per side, until they are deep golden brown and crispy. Remove the tostones from the oil and drain them again on fresh paper towels.
  7. 7Sprinkle the 1/2 teaspoon of salt evenly over the hot tostones.
  8. 8Serve the tostones immediately with the 1/2 cup of Mojo Sauce on the side for dipping.
