Ingredients

  • 2 large Green Plantains
  • 2 cups Vegetable Oil
  • 6 cloves Garlic
  • 1/2 cup Sour Orange Juice (or Lime Juice)
  • 2 tablespoons Olive Oil
  • 1 teaspoon Oregano
  • 1 teaspoon Salt

Instructions

  1. 1Peel and slice the plantains into 1-inch thick rounds.
  2. 2Heat vegetable oil in a deep skillet or pot to 350°F (175°C).
  3. 3Fry the plantain slices for 2-3 minutes per side, until lightly golden. Remove and drain on paper towels.
  4. 4Using a tostonera or a flat surface, flatten each plantain slice.
  5. 5Reheat the oil to 375°F (190°C).
  6. 6Fry the flattened plantains again for 1-2 minutes per side, until golden brown and crispy. Drain on paper towels.
  7. 7For the mojo: Mince the garlic. Combine garlic, sour orange juice (or lime juice), olive oil, oregano, and salt in a bowl. Mix well.
  8. 8Serve the tostones immediately with the mojo drizzled over them.
