Ingredients

  • 2 large Green Plantains
  • 2 cups Vegetable Oil
  • 2 medium Tomatoes
  • 1 medium Onion
  • 2 cloves Garlic
  • 2 tablespoons Cilantro
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Black Pepper

Instructions

  1. 1Peel the plantains and cut them into 1-inch thick slices.
  2. 2Heat vegetable oil in a deep skillet or pot over medium heat to 325°F (160°C).
  3. 3Fry the plantain slices for about 3-4 minutes per side, until lightly golden. Remove from the oil and place on a paper towel-lined plate to drain.
  4. 4Using a tostonera (plantain press) or the bottom of a glass, flatten each plantain slice to about 1/2 inch thickness.
  5. 5Increase the oil temperature to 375°F (190°C).
  6. 6Fry the flattened plantain slices again for about 2-3 minutes per side, until golden brown and crispy. Remove from the oil and place on a paper towel-lined plate to drain. Season with salt.
  7. 7To make the hogao: In a separate skillet, sauté the diced tomatoes and onion over medium heat until softened, about 8-10 minutes.
  8. 8Add the minced garlic, cilantro, salt, and pepper. Cook for another 2 minutes.
  9. 9Top the tostones with the hogao sauce and serve immediately.
