Ingredients

  • 1 pound Ground beef
  • 1 medium Onion
  • 4 medium Tomatoes
  • 2 cloves Garlic
  • 1 teaspoon Ground cumin
  • 1/2 teaspoon Dried oregano
  • 1 cup Beef broth
  • 2 tablespoons Olive oil
  • 1 teaspoon Salt
  • 1/2 teaspoon Black pepper
  • 1 teaspoon Sugar

Instructions

  1. 1Heat the 2 tablespoons of olive oil in a large, heavy-bottomed pot over medium heat, about 350°F (175°C).
  2. 2Add the 1 pound of ground beef to the pot. Cook, breaking it up with a spoon, until it is browned all over, about 5-7 minutes. Drain off any excess fat.
  3. 3Add the 1 medium onion, cut into small dice, and the 2 cloves of garlic, minced, to the pot. Cook, stirring often, until the onion is softened and looks translucent, about 5 minutes.
  4. 4Stir in the 4 medium tomatoes, cut into small dice, the 1 teaspoon of ground cumin, the 1/2 teaspoon of dried oregano, the 1 cup of beef broth, the 1 teaspoon of salt, the 1/2 teaspoon of black pepper, and the 1 teaspoon of sugar. Stir everything together well.
  5. 5Bring the mixture to a boil. Once boiling, reduce the heat to low, cover the pot, and let it simmer gently for 30 minutes. Stir occasionally. The stew should thicken and the flavors will meld.
  6. 6Serve the Tomaticán hot.
