Ingredients

  • 2 tbsp Olive oil
  • 1 medium Onion, chopped
  • 1 medium Green bell pepper, chopped
  • 2 cloves Garlic, minced
  • 28 oz Diced tomatoes
  • 1 lb Ground beef
  • 1 cup Corn kernels, fresh or frozen
  • 1 tsp Sugar
  • 1/2 tsp Salt
  • 1/4 tsp Black pepper
  • 6 large Eggs
  • 1/4 cup Plant-based milk (e.g., almond, soy)
  • 2 tbsp Fresh basil, chopped

Instructions

  1. 1Heat olive oil in a large pot over medium heat. Add onion and bell pepper and cook until softened, about 5 minutes.
  2. 2Add garlic and ground beef and cook, breaking up the meat, until browned.
  3. 3Stir in diced tomatoes, corn, sugar, salt, and pepper. Bring to a simmer and cook for 20 minutes, stirring occasionally.
  4. 4While the tomaticán simmers, whisk together eggs and plant-based milk in a bowl. Season with salt and pepper.
  5. 5Heat a non-stick skillet over medium heat. Pour in the egg mixture and cook, stirring occasionally, until the eggs are set but still slightly moist.
  6. 6Serve the tomaticán topped with scrambled eggs and fresh basil.
