Ingredients

  • 250 g Feta Cheese
  • 250 g Ricotta Cheese
  • 10 sheets Phyllo Dough
  • 1/2 cup Olive Oil
  • 2 tbsp Milk
  • 1 tbsp Cornstarch

Instructions

  1. 1Preheat your oven to 375°F (190°C).
  2. 2In a medium bowl, combine the 250 g Feta Cheese and 250 g Ricotta Cheese. Add the 2 tbsp Milk and 1 tbsp Cornstarch. Mix everything together until it is well combined.
  3. 3Lay one sheet of the 10 sheets Phyllo Dough flat. Lightly brush the entire surface with some of the 1/2 cup Olive Oil. Place a second sheet of phyllo directly on top. Brush this second sheet with olive oil. Repeat this process until you have a stack of 5 oiled phyllo sheets.
  4. 4Spread the cheese mixture evenly over the top layer of the phyllo stack, leaving a small border along one of the longer edges.
  5. 5Starting from the long edge opposite the border, carefully and tightly roll the phyllo dough into a log. Once rolled, gently coil the log into a spiral shape. Place the spiral onto a baking sheet.
  6. 6Brush the entire surface of the phyllo spiral with the remaining 1/2 cup Olive Oil.
  7. 7Bake for 20-25 minutes, or until the phyllo is a deep golden brown and looks crispy.
