Ingredients

  • 2 lbs Pork belly, cut into cubes
  • 6 each Hard-boiled eggs, peeled
  • 1/2 cup Sugar
  • 1/4 cup Fish sauce
  • 2 tbsp Soy sauce
  • 4 cloves Garlic, minced
  • 2 tbsp Shallots, minced
  • 1/2 tsp Black pepper
  • 4 cups Water

Instructions

  1. 1Prepare the caramel sauce: In a heavy-bottomed pot, heat sugar over medium heat until it melts and turns into a golden caramel. Be careful not to burn it.
  2. 2Add pork and aromatics: Add pork belly, garlic, and shallots to the pot. Sauté until the pork is lightly browned.
  3. 3Add liquid and seasoning: Add fish sauce, soy sauce, black pepper, and water to the pot. Bring to a boil, then reduce heat and simmer for at least 1.5 hours, or until the pork is very tender.
  4. 4Add eggs: Add hard-boiled eggs to the pot during the last 30 minutes of cooking.
  5. 5Serve hot with rice.
