Ingredients

  • 1.5 lbs Chicken thighs, boneless, skinless
  • 1/4 cup Gluten-free tamari
  • 1/4 cup Shaoxing rice wine
  • 1/4 cup Sesame oil
  • 1/4 cup Ginger, sliced
  • 6 cloves Garlic, minced
  • 1 cup Fresh basil leaves
  • 1 small Red chili pepper, sliced (optional)
  • 1 tablespoon Cornstarch

Instructions

  1. 1Cut chicken thighs into 1-inch pieces and marinate with cornstarch for 10 minutes.
  2. 2Heat sesame oil in a clay pot or heavy-bottomed pan over medium heat.
  3. 3Add ginger and garlic, and cook until fragrant, about 2 minutes.
  4. 4Add chicken and cook until browned on all sides.
  5. 5Pour in tamari and rice wine. Bring to a simmer.
  6. 6Cover and cook for 15 minutes, or until chicken is cooked through.
  7. 7Stir in basil leaves and chili pepper (if using). Cook for another minute until basil is wilted.
  8. 8Serve hot with gluten-free rice.
