Thiakry (Sweet Millet Pudding) with Coconut Milk

Ingredients

  • 1 cup Millet couscous
  • 2 cups Coconut milk
  • 1 cup Water
  • 1/2 cup Sugar
  • 1 tsp Vanilla extract
  • 1/4 cup Raisins

Instructions

  1. 1Rinse the millet couscous under cold water.
  2. 2In a saucepan, combine the coconut milk and water. Bring to a boil.
  3. 3Add the rinsed millet couscous and sugar. Reduce heat to low and simmer for 20-25 minutes, or until the millet is cooked through and the pudding has thickened, stirring occasionally.
  4. 4Stir in the vanilla extract and raisins.
  5. 5Remove from heat and let cool slightly before serving. Serve warm or chilled.
