Thiakry (Sweet Millet Pudding)

A creamy and comforting millet pudding, sweetened and flavored with vanilla. This recipe uses coconut milk to keep it dairy-free.

Ingredients

  • 1 cup Millet Couscous
  • 4 cups Coconut Milk
  • 1/2 cup Sugar
  • 1 tsp Vanilla Extract
  • 1/4 cup Raisins
  • 2 tbsp Grated Coconut

Instructions

  1. 1Rinse the millet couscous under cold water.
  2. 2In a saucepan, combine the millet couscous and coconut milk.
  3. 3Bring to a boil, then reduce heat and simmer for 40-45 minutes, or until the millet is soft and the mixture has thickened, stirring occasionally.
  4. 4Stir in the sugar and vanilla extract.
  5. 5Cook for another 5 minutes, stirring constantly, until the sugar is dissolved.
  6. 6Remove from heat and stir in the raisins.
  7. 7Serve warm or cold, garnished with grated coconut.
