Ingredients

  • 1 cup Couscous
  • 1 cup Water
  • 2 cups Plain yogurt
  • 1/4 cup Sugar
  • 1 tsp Vanilla extract
  • 1/4 tsp Ground nutmeg

Instructions

  1. 1Pour the 1 cup of water into a medium saucepan and bring it to a rolling boil over high heat. This should take about 5 minutes.
  2. 2Once the water is boiling, carefully stir in the 1 cup of couscous. Immediately cover the saucepan with a lid and remove it from the heat. Let it stand, covered, for 5 minutes, or until all the water has been absorbed.
  3. 3Remove the lid from the saucepan and use a fork to gently fluff the couscous, separating the grains. This will prevent it from clumping.
  4. 4In a large bowl, combine the fluffed couscous with the 2 cups of plain yogurt, 1/4 cup of sugar, 1 teaspoon of vanilla extract, and 1/4 teaspoon of ground nutmeg.
  5. 5Stir all the ingredients together thoroughly until they are well combined and the mixture is smooth and creamy. Ensure there are no pockets of yogurt or couscous.
  6. 6Cover the bowl with plastic wrap or a lid and place it in the refrigerator. Chill for at least 30 minutes to allow the flavors to meld and the pudding to thicken slightly. This chilling time is important for the texture and taste.
