Ingredients

  • 1 cup Couscous
  • 1 cup Water
  • 1 can Canned coconut cream
  • 0.5 cup Sugar
  • 1 tsp Vanilla extract
  • 0.25 tsp Grated nutmeg
  • 0.25 cup Dried fruit (raisins, cranberries)

Instructions

  1. 1In a saucepan, bring water to a boil. Add couscous, stir, and remove from heat. Cover and let sit for 5 minutes, or until the water is absorbed.
  2. 2Fluff the couscous with a fork.
  3. 3In a separate saucepan, combine coconut cream, sugar, vanilla extract, and nutmeg. Heat over medium heat, stirring until the sugar is dissolved.
  4. 4Add the cooked couscous to the coconut cream mixture and stir well to combine.
  5. 5Simmer for about 5-10 minutes, stirring occasionally, until the pudding has thickened slightly.
  6. 6Stir in the dried fruit.
  7. 7Serve warm or chilled.
