Thiakry Parfaits with Coconut Cream

Ingredients

  • 1 cup Millet Couscous
  • 2 cups Water
  • 1/2 can Sweetened Condensed Milk
  • 1 teaspoon Vanilla Extract
  • 1/4 cup Grated Coconut
  • 1 can Coconut Cream
  • 2 tablespoons Sugar
  • 1/8 teaspoon Pinch of Salt

Instructions

  1. 1Cook the Millet Couscous: Rinse the millet couscous. In a saucepan, bring water to a boil. Add millet couscous and salt. Reduce heat and simmer for 20-25 minutes, or until the couscous is tender and has absorbed the water.
  2. 2Prepare the Thiakry: Stir in sweetened condensed milk, vanilla extract, and grated coconut into the cooked millet couscous. Mix well and let it cool.
  3. 3Prepare the Coconut Cream: Refrigerate the can of coconut cream overnight. Scoop out the thick cream from the top of the can, leaving the watery liquid behind. Whip the coconut cream with sugar until light and fluffy.
  4. 4Assemble the Parfaits: Layer thiakry and coconut cream in glasses or parfait dishes.
  5. 5Chill for at least 30 minutes before serving.
  6. 6Garnish with additional grated coconut, if desired.
