Thiakry Inspired Pudding

A creamy and sweet pudding, inspired by thiakry, a traditional Senegalese millet and yogurt dessert. Coconut yogurt subs in for dairy.

Ingredients

  • 1 cup Millet Couscous
  • 2 cups Water
  • 2 cups Coconut Yogurt
  • 1 tsp Vanilla Extract
  • 1/4 tsp Nutmeg
  • 2 tbsp Maple Syrup

Instructions

  1. 1Rinse the millet couscous under cold water.
  2. 2In a saucepan, bring the water to a boil.
  3. 3Add the rinsed millet couscous and reduce heat to low. Simmer for 15-20 minutes, or until the couscous is tender and has absorbed most of the water.
  4. 4Remove from heat and let cool slightly.
  5. 5In a large bowl, combine the cooked millet couscous, coconut yogurt, vanilla extract, nutmeg, and maple syrup.
  6. 6Stir until well combined.
  7. 7Serve chilled or at room temperature.
