Ingredients

  • 1 cup Millet Couscous
  • 2 cups Full-Fat Coconut Milk
  • 1 cup Water
  • 8 whole Medjool Dates
  • 1 teaspoon Vanilla Extract
  • 1/2 teaspoon Ground Nutmeg
  • 1/4 teaspoon Pinch of Salt

Instructions

  1. 1Rinse the millet couscous in a fine-mesh sieve under cold water.
  2. 2In a saucepan, combine the coconut milk, water, and dates. Bring to a simmer over medium heat.
  3. 3Add the millet couscous and stir well. Reduce heat to low, cover, and cook for 20-25 minutes, or until the couscous is tender and the mixture has thickened.
  4. 4Remove from heat and stir in the vanilla extract, nutmeg, and salt.
  5. 5Let the pudding cool slightly before serving. Can be served warm or chilled.
