Thai Sweet Sticky Rice with Mango (Breakfast Version)

Ingredients

  • 2 cups Glutinous rice (sticky rice)
  • 1 can Coconut milk
  • 1/2 cup Sugar
  • 1/4 teaspoon Salt
  • 2 large Fresh mangoes
  • 2 tablespoons Toasted sesame seeds

Instructions

  1. 1Rinse the glutinous rice and soak it in water for at least 4 hours, or overnight.
  2. 2Drain the rice and steam it in a steamer lined with cheesecloth for 30-40 minutes, or until cooked through and sticky.
  3. 3While the rice is steaming, heat coconut milk, sugar, and salt in a saucepan over medium heat until the sugar dissolves. Simmer for 5 minutes.
  4. 4Once the rice is cooked, transfer it to a bowl and pour the coconut milk mixture over it. Mix well and let it sit for 15 minutes to absorb the liquid.
  5. 5Peel and slice the mangoes.
  6. 6Serve the sticky rice with mango slices and sprinkle with toasted sesame seeds.
