Ingredients

  • 1 lb Chicken Breast
  • 8 oz Rice Noodles
  • 1/2 cup Peanut Butter
  • 1/4 cup Tamari
  • 2 tablespoons Honey
  • 2 tablespoons Lime Juice
  • 2 cloves Garlic
  • 1 teaspoon Ginger
  • 1/4 teaspoon Red Pepper Flakes
  • 1 tablespoon Sesame Oil
  • 1 cup Shredded Carrots
  • 1/2 cup Chopped Green Onions
  • 1/4 cup Chopped Peanuts

Instructions

  1. 1Bring a large pot of water to a rolling boil over high heat. Carefully add the 8 oz Rice Noodles to the boiling water and cook for 3-5 minutes, or until the noodles are tender but still firm to the bite. Drain the noodles thoroughly in a colander and set them aside.
  2. 2On a clean cutting board, cut the 1 lb Chicken Breast into 1-inch bite-sized pieces.
  3. 3Place a 12-inch skillet or wok over medium-high heat, allowing it to reach 400°F (200°C). Add the 1 tablespoon Sesame Oil to the hot skillet.
  4. 4Add the cut 1 lb Chicken Breast pieces to the hot skillet. Cook for 5-7 minutes, stirring occasionally, until the chicken is browned on all sides and cooked through, reaching an internal temperature of 165°F (74°C) when measured with a meat thermometer.
  5. 5While the chicken cooks, in a medium bowl, combine the 1/2 cup Peanut Butter, 1/4 cup Tamari, 2 tablespoons Honey, 2 tablespoons Lime Juice, 2 cloves Garlic (minced), 1 teaspoon Ginger (grated), and 1/4 teaspoon Red Pepper Flakes. Whisk vigorously until the sauce is completely smooth and well combined.
  6. 6Add the cooked 8 oz Rice Noodles and the cooked 1 lb Chicken Breast to the skillet. Pour the prepared peanut sauce mixture over the noodles and chicken.
  7. 7Using tongs or two large spoons, gently toss all ingredients together for 1-2 minutes, ensuring the noodles and chicken are evenly coated with the sauce.
  8. 8Stir in the 1 cup Shredded Carrots and the 1/2 cup Chopped Green Onions. Continue to cook for 1 minute, stirring constantly, until the carrots and green onions are slightly softened but still have a slight crispness.
  9. 9Immediately transfer the Thai Peanut Noodles with Chicken to serving bowls. Garnish each serving with the 1/4 cup Chopped Peanuts before serving.
