Ingredients

  • 1 large, grated Sweet Potato
  • 1/4 cup Rice Flour
  • 2 tablespoons Tapioca Starch
  • 1 tablespoon Red Curry Paste
  • 1/4 cup Coconut Flakes
  • 2 tablespoons, chopped Green Onions
  • 1 large Egg
  • 1 teaspoon Soy Sauce
  • 2 tablespoons Vegetable Oil

Instructions

  1. 1In a large bowl, combine the grated sweet potato, rice flour, tapioca starch, red curry paste, coconut flakes, green onions, egg, and soy sauce. Mix well.
  2. 2Heat vegetable oil in a large skillet over medium heat.
  3. 3Drop spoonfuls of the sweet potato mixture into the hot oil, flattening them slightly.
  4. 4Cook for 3-4 minutes per side, or until golden brown and cooked through.
  5. 5Remove the fritters from the skillet and place them on a paper towel-lined plate to drain excess oil.
