Ingredients

  • 1 lb Edamame
  • 1 tbsp Soy Sauce
  • 1 tbsp Lime Juice
  • 2 tbsp Toasted Coconut Flakes
  • 1/4 tsp Red Pepper Flakes

Instructions

  1. 1Place the 1 lb of Edamame in a large pot with enough water to cover them. Bring the water to a boil over high heat, then reduce the heat to medium and simmer for 5 to 7 minutes, or until the edamame are tender when pierced with a fork.
  2. 2While the edamame are simmering, combine the 1 tbsp Soy Sauce and 1 tbsp Lime Juice in a small bowl. Whisk them together until they are well mixed.
  3. 3Once the edamame are tender, carefully drain all the hot water from the pot.
  4. 4Return the drained edamame to the warm pot. Pour the soy sauce and lime juice mixture over the edamame. Gently toss the edamame to ensure they are evenly coated with the sauce.
  5. 5Add the 2 tbsp of Toasted Coconut Flakes and the 1/4 tsp of Red Pepper Flakes to the pot with the edamame. Toss everything together for another 30 seconds to distribute the flakes.
  6. 6Serve the Thai-Inspired Edamame warm.
