Ingredients

  • 1 block Firm Tofu
  • 2 tablespoons Coconut Oil
  • 2 tablespoons Green Curry Paste
  • 1 can Coconut Milk
  • 1 cup Bamboo Shoots
  • 1.5 cups Bell Peppers (mixed)
  • 1 cup Snap Peas
  • 0.25 cup Thai Basil Leaves
  • 2 tablespoons Soy Sauce
  • 1 tablespoon Lime Juice
  • 1 teaspoon Brown Sugar
  • 4 cups Cooked Jasmine Rice

Instructions

  1. 1Press tofu to remove excess water, then cut into cubes.
  2. 2Heat coconut oil in a large skillet or wok over medium-high heat. Add tofu and cook until golden brown and crispy on all sides.
  3. 3Remove tofu and set aside. Add green curry paste to the skillet and cook for 1 minute until fragrant.
  4. 4Pour in coconut milk and bring to a simmer. Add bamboo shoots, bell peppers, and snap peas.
  5. 5Cook for 5-7 minutes, or until vegetables are tender-crisp.
  6. 6Stir in soy sauce, lime juice, and brown sugar. Add the cooked tofu back into the skillet.
  7. 7Simmer for another 2 minutes to allow flavors to meld.
  8. 8Stir in Thai basil leaves. Serve hot over jasmine rice.
