Bring to a boil over medium-high heat (200°C / 400°F), then reduce heat to low (95°C / 200°F), cover, and simmer for 15-20 minutes, or until the liquid is absorbed and the rice is tender. Let it rest, covered, off the heat for 5 minutes.
- 2While the rice cooks, prepare the vegetables. Cut the 1 large Bell pepper into 1-inch pieces. Cut the 1 medium Zucchini into 1/2-inch thick half-moons.
- 3Heat a large skillet or wok over medium-high heat (190°C / 375°F). Add the 1 lb Shrimp and cook for 2-3 minutes per side, until they turn pink and opaque. Remove the shrimp from the skillet and set aside.
- 4Add the 2 tbsp of Green curry paste to the same skillet and cook, stirring constantly, for 1 minute until fragrant.
- 5Pour in the 1 can of Coconut milk and bring the mixture to a gentle simmer over medium heat (175°C / 350°F).
