Ingredients

  • 4 cups Cooked rice
  • 1 cup Pineapple
  • 1/2 medium Green bell pepper
  • 1/2 medium Carrot
  • 2 stalks Green onions
  • 2 tablespoons Coconut oil
  • 2 tablespoons Thai green curry paste
  • 2 tablespoons Soy sauce
  • 1 tablespoon Lime juice

Instructions

  1. 1Dice the pineapple, green bell pepper, and carrot. Slice the green onions.
  2. 2Heat coconut oil in a large wok or skillet over medium-high heat. Add the green curry paste and cook for 1 minute, stirring constantly, until fragrant.
  3. 3Add the diced green bell pepper and carrot. Cook for 3-4 minutes, stirring occasionally, until slightly softened.
  4. 4Add the cooked rice and pineapple to the wok. Stir-fry for 5-7 minutes, breaking up any clumps of rice, until the rice is heated through and well combined with the vegetables and curry paste.
  5. 5Stir in the soy sauce and lime juice.
  6. 6Garnish with green onions and serve immediately.
