Thai Chicken Satay with Peanut-Free Sauce

Ingredients

  • 1.5 lb Chicken Thighs (boneless, skinless, cut into strips)
  • 1/2 cup Coconut Milk
  • 2 tbsp Soy Sauce (or Tamari)
  • 2 tbsp Lime Juice
  • 1 tbsp Ginger (grated)
  • 2 cloves Garlic (minced)
  • 1 tsp Turmeric Powder
  • 1/2 tsp Cumin
  • 1/2 tsp Coriander
  • 1/2 cup Sunflower Seed Butter
  • 1/2 cup Coconut Milk (for sauce)
  • 1 tbsp Soy Sauce (or Tamari, for sauce)
  • 1 tbsp Lime Juice (for sauce)
  • 1 tbsp Maple Syrup
  • 1/4 tsp Red Pepper Flakes

Instructions

  1. 1In a medium bowl, combine the 1/2 cup coconut milk, 2 tablespoons soy sauce (or Tamari), 2 tablespoons lime juice, 1 tablespoon grated ginger, 2 cloves minced garlic, 1 teaspoon turmeric powder, 1/2 teaspoon cumin, and 1/2 teaspoon coriander. Add the 1.5 lb chicken thighs and stir to coat completely. Cover the bowl and let the chicken marinate in the refrigerator for at least 30 minutes, or up to 4 hours.
  2. 2While the chicken is marinating, make the sunflower seed sauce. In a blender or food processor, combine the 1/2 cup sunflower seed butter, 1/2 cup coconut milk, 1 tablespoon soy sauce (or Tamari), 1 tablespoon lime juice, 1 tablespoon maple syrup, and 1/4 teaspoon red pepper flakes. Blend until the mixture is smooth and creamy. If the sauce is too thick, add a tablespoon of water at a time and blend again until you reach your desired consistency.
  3. 3Preheat your grill to medium heat, which is approximately 350-400°F (175-200°C).
  4. 4Thread the marinated chicken pieces onto skewers. If using wooden skewers, soak them in water for at least 30 minutes before threading the chicken to prevent burning.
  5. 5Place the chicken skewers on the preheated grill. Grill for 6 to 8 minutes per side, or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C). The chicken should be lightly browned and no longer pink inside.
  6. 6Remove the chicken skewers from the grill and let them rest for 5 minutes. This allows the juices to redistribute, making the chicken more tender.
  7. 7Serve the grilled chicken satay skewers with the prepared sunflower seed sauce on the side for dipping.
